Lightened-up bread puddingO.M.G. My variations below:
Ingredients: 1 370ml can evaporated fat-free milk
1 egg
2 egg whites (I like an eggy custard)
6 slices stale white bread, torn into 1/2"~ish pieces
1/3 cup sugar - EDIT: I forgot! I used Demerara brown sugar instead of white!
1/4 cup raisins - I pre-soaked my raisins in English Breakfast tea until they were plump
1/4 teaspoon nutmeg I had no nutmeg in the house
1/4 teaspoon cinnamon - I just used a few shakes as I'm not a huge cinnamon fan
1 tablespoon cold butter, cut in several pieces - I used teeny pinches and tried to distribute evenly in a grid-like pattern over the top of the mixture
I skipped the whipped cream for a topping and used a spoonful of
Skinny Cow caramel type ice cream instead. Melty ice cream on top of hot bread pudding? OH~! So good!
Preparation:Beat milk, egg, and egg white together in a large bowl. Add bread cubes, stir to moisten bread, and let stand 30 minutes. Do not drain.
Spray an 8- or 9-inch baking dish with cooking spray. Preheat oven to 375ºF.
Add sugar, raisins, and cinnamon to bread mixture, and stir to distribute spices. Pour into prepared pan and dot with pieces of cold butter. Bake 30 minutes in preheated oven.
While pudding is baking, watch HGTV and judge people's interior design decisions.
To serve, spoon out big chunks of delicious pudding. Make sure you pick at the crispy, buttery crusty bits because those are the best parts and are best when they're hot from the oven.
